Winemaking of Ribeiro Santo Encruzado Branco Wine: Manual harvest. Grapes from a single vineyard of the Encruzado variety, from Quinta do Ribeiro Santo. Total destemming and pressing. Selection of grape must, followed by cooling and decantation at a low temperature for 24 hours. Fermentation in stainless steel tanks at around 15ºC for 20 days. 50% of the wine finishes fermentation in new French oak barrels for 4 months.
