San Michel Curtimenta Farm

Grapes harvested manually in 20 kg buckets, then transported to the winery. Partial destemming without crushing the bunches, followed by 30 days of fermentation with skin maceration - "curtimenta". Subsequently, pressed and transferred to barrels.

12 months on the lees in used French oak barrels, followed by 6 months in bottle.
