Encruzado Oenologist

Casa da Passarella O Enólogo Encruzado Branco 2023 is made from Dão's queen grape variety, Encruzado, known for its freshness, elegance, and longevity. This wine uniquely expresses the character and tradition of the region's wines, combining oenological precision with the naturalness of the vineyard.

The harvest was carried out manually, ensuring a rigorous selection of grapes. Vinification began with a long pre-fermentative maceration, followed by light pressing, and the must underwent natural decantation before slowly fermenting in used 600-liter French oak barrels. During aging, carried out in concrete tanks with periodic bâtonnage, the wine developed complexity, freshness, and a delicate texture, with a small portion aging in barrels, enhancing its aromatic depth.
