In stainless steel vats, between 14º and 16ºC, for 30 days
Grapes destemmed and gently pressed for 1h30
The base wine was kept for one month after fermentation with "bâtonnage". On fine lees for 9 months. The wine was filtered and underwent a second fermentation in the bottle.
During disgorgement, the same wine was added without any dosage liqueur
