Manual harvest. Destemming and light crushing, followed by thermal shock to 10ºC using a mass exchanger. Pneumatic pressing, followed by cold static decantation for 24 hours. Partial fermentation in French oak barrels, the remaining wine ferments in stainless steel with controlled temperature.
