Melgaço, the northernmost region of Portugal, is protected by a series of mountains that allow for a perfect marriage between rainfall, temperature, and the number of hours of sunshine necessary for the optimal ripening of Alvarinho grapes. This climatic characteristic during ripening is often associated with the microclimate of Monção and Melgaço, which alternates hot days with cold nights, allowing for the retention of fresh and fruity aromas with a present, but moderate, acidity, much in the style we define for Soalheiro. Vinification of Vinho Verde Alvarinho Soalheiro: The grapes, exclusively of the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short period of time. After pressing, the obtained must decants for 48 hours, followed by fermentation at a controlled temperature, using pre-selected yeasts for this purpose. Bottling takes place after the wine's stabilization, followed by a period of bottle aging. The vinification of Alvarinho Soalheiro aims to obtain a wine that concentrates the quality of the grapes and allows for good evolution after bottling.
