Conves White Sparkling Wine

Grapes cooled in a cold chamber for 24 hours at 10ºC. Manual selection on a vibrating sorting table. Whole bunch vacuum pressing, followed by cold decantation for 48 hours. Individual fermentation of each grape variety in stainless steel tanks with controlled temperature. The second fermentation is carried out in the bottle, followed by aging on the lees for 18 months.
